Every upgrade comes with a story.
For us, this one started with a green plywood box.
Our first coffee cart was locally made, custom-built and foldable. It was painted in our signature green, a deliberate decision to make Blank more recognisable at events. At the time, it did exactly what we needed it to do. It gave us a way to bring our coffee setup beyond the cafe and into weddings, corporate events, pop-ups and everything in between.
We were happy with it.
But as we took on more coffee catering jobs, we started to notice a few things.
The Good, The Bad, and The Heavy
The old cart was built from plywood with a Formica laminate finish. It was customisable, practical in its own way, and served us well during our earlier days.
The problem was that it was really difficult to move.
Not necessarily because it was too heavy to lift, but because its size and shape made it awkward to manoeuvre. Loading it into our regular sedan was never the most convenient task either.
Over time, the laminate started chipping and breaking. What once looked good began to show the wear and tear of being moved from one event to another.
It was a good cart for the stage of the business we were in.
But we were growing, learning, and taking on different kinds of events. Eventually, we knew it was time for a change.
Meet The New Cart

This time, we approached the process a little differently.
After working across different events and catering setups, we had a much better idea of what we needed, what we could do without, and what would make our lives easier during service.
So, we had a new cart custom-built to our specifications.
The new setup combines solid wood with 5mm stainless steel, bringing together the warmth of wood and the durability of stainless steel. It also comes with a storage drawer, dedicated space for a mini fridge, a built-in ice bin and a drainage system.
In other words, we tried to think beyond how the cart looks and consider how it would actually work during service.
And aesthetically?
We absolutely love it.
The design feels more refined and versatile, making it suitable for all kinds of occasions, from intimate weddings to corporate functions and professional events. It feels more like the kind of setup we want Blank to be known for as our catering work continues to grow.
Of course, whether we got everything right is something we'll only find out with time.
Every Upgrade Has Its Trade-Offs
As much as we love the new cart, it isn't perfect.
Its compact design means storage space is limited. We have to be more deliberate about what we bring, how we organise our equipment, and what needs to be prepared before arriving at a venue.
And remember how we said the old cart was difficult to transport?
Well, we've traded one problem for another.
The new cart is no longer foldable, which means we can no longer fit it into our regular sedan. We'll need external logistics to get it to and from events.
That's an additional consideration whenever we plan a job.
But these were trade-offs we were willing to make.
We could have designed another foldable cart that prioritised convenience during transportation. Instead, we chose a setup that better fits the kind of service we want to provide, even if it means a little more planning behind the scenes.
Sometimes, the right upgrade isn't the one that makes everything easier. It's the one that makes the important things better.
More Than Just A Coffee Cart
For us, this new cart represents another small step forward for Blank Coffee Roaster.
When we first started, we worked with what we had. We made decisions based on what we knew at the time, and we figured things out as we went along.
Now, after serving clients across different events, we've learnt a little more about what good coffee catering requires. Not just good coffee, but a setup that works, a service that feels considered, and an experience that reflects the people we're serving.
We're still learning. There will probably be things we wish we'd done differently, and there will certainly be more things to improve in the future.
But that's part of building something.
You start with what you have. You learn from what doesn't work. And when the time comes, you make the next move.
Here's to the new cart, the events ahead, and all the blanks we'll get to fill along the way.
